Always liked the Gerber coffin handle bowie - discontinued now, though, so the bay and some of the knife forums would be your best bet. Done by Gerber when they were still making great knives. Might be a little too modern for you though, but they were made with both a rubber and hardwood...

If I recall correctly, internal parts on the 870P are all metal unlike the basic run-of-the-mill 870 that has some plastic parts. In addition, the P has the metal guard, parkerized and so on.
The OP could always go for a Mossberg 590A1 if he wants the "real" deal in a field shotgun...
No one is hitting the brakes. As much as I like reading about the next "super steel" that just came out or is in the making, we're hitting diminishing returns... especially when these steels are to be used on every day carry knives.
