    Pickles!

    I spent the summer canning cucumbers! I haven’t done canning since I was a kid so it was an amazing adventure! We will have a bigger garden next year!

    Found my grandmothers 33 qt granite ware canner. It has some rust spots in the pot but no holes and the wire rack is coated in mild surface rust.
    Would it be safe to use after cleaning the rack with steelwool?

    Its just the water bath canner right? Its fine unless it leaks

    I think ours recipe was 16 bushels of apples peeled and voted.

    Chop up as fine as possible

    Cook in a Cooper kettle, I still have mine, stirring constantly and for the first half od the time, about 4 hours, smashing them

    The 4 hours or so stirring constantly

    At the end add 10-20 lbs white sugar and about 5 lbs brown sugar and cinimon to taste

    Then can

    I'm about to start into two bushels of apples for sauce. Give the mentions of apple butter, I may make some of that too.

    If you don't already use it, the kitchenmaid mixer attachment is ablsolutley mandatory equipment for making either. Makes it almost no work at all.

    Crock pot? Which recipe and is it any good?

    Bit of a failure last time.

    Yes, she was using the 7 quart crock pot for 6#. We have 9# but it was too much to start until it cooked down. I was liking the idea of using the stove top and canning pot as we have two and large batching it. She cooked them soft and them filled the blender and chopped it smooth, tranfered to another pot. The crock pot is easy for small batches. 6# of apples fir in the crock pot.

    We used to can for both my parents parents and all the family, nothing was a lifetime supply lol

    The wife and I have canned between 500-1000 jars a year

    If folks actually counted how many cans, or now bags of frozen veggies, that they used per year they would be surprised

    Hell we used to go thru hundreds of pounds of lard per year as a family, I don’t think folks even put up lard anymore

    We need to can more , I know that as a fact

    Wow. I've done a few bushels of apples.. 16 is a part time job! Excellent work.

    I agree. If you think of the food we consume in a year/season... We just piecemeal with trips to grocery store. Otherwise.. how many pounds of flour would we use to make bread and pasta alone!

    I have been trimming the buck I shot and saving steaks and probably the two sides of the neck as roasts. I will save a a lot of diced chucks and pieces that are not shanks and can some. Experiment with pre-made soups/stews without thickening and stroganoff base in quarts.

    Anyone done this? Looking for ideas and best practices before blindly following internet advice.

    Did 3 quarts of pickled eggs today. Bread and butter spice mix with extra vinegar, and a bunch of chopped fresh jalapeños.

    My daughter has been using our B&B Pickle brine for eggs lately. She loves it, but not spicy for her.
