I uploaded the articles of org & EIN. She stated that I needed a schedule C but since I started my business this year I wouldn’t have that paperwork. Has anyone else ran into this issue? What other documents would suffice stating that I’m a legitimate owner of my LLC

You should be able to point to the MD Sales/Use Tax web site and show that the LLC is in good standing, and ... didn't Maryland provide you with any paperwork once you formed the LLC? That would show you as the (I presume) single member of that LLC, by name, on state letterhead.
