I have been using a SharpMaker seems like forever. I like that it’s simple and easy to use. I want my knives sharp enough to slowly cut a single sheet of newspaper starting from the edge, cleanly and easily. I realize they could be sharpened beyond that but that’s sharp enough for all my purposes.
