    Before everyone starts piling on TOO much, it is illegal to sell game meat in Maryland. Giving it away/donating it is perfectly legal. When asking if any is "for sale" it will be met with suspicion.
    If you're looking for venison because you don't hunt (like me) or supply a food bank/shelter, I'm sure there are many here who would help you out. If your family is in need of food, plenty of us will take you grocery shopping.

    100% venison, but I think dad adds an egg to help bind the meat better. He likes making burgers lol. Nothing added for chili. Dad uses Montreal steak seasoning and olive oil to cook burgers. Same goes for backstraps and steak roasts, the steak seasoning and olive oil.

    My M-n-L like to make some I give her as 100% but fries their burgers in olive oil or bacon grease.

    If you want to cut it for fat pork fat is the cheapest and most solid fat out there. The butcher I go to sells back fat for $.50 a pound. 10 - 20% fat as you prefer or cut it with 50% pork shoulder for 15% fat content or 73% beef for a 13.5% fat content. The latter is what some of my buddies do.

    I grind 1/4 deer butchering,
    We use 100% ground venison for everything except burgers,,, we buy bulk packs of beef burgers.
    Just made taco dip and perogies with venison

    There are two option imo:

    1 - Add some sort of pork or duck fat to the mix
    2 - Sear hot and fast to cook Medium rare
