What are your intentions with the piece? It's value it shot now except for being a shooter so do as you like. If you want it blued...fine. If your intention is as a field gun consider having it hard chromed or some other wear resistant finish. If you want a nice show piece, send it to Turnbull's as mentioned above for a complete restoration.
A lot can depend on what generation Colt SAA it is. Colt purists will hesitate to do anything to a first or second generation but don't consider a third generation as desirable for various reasons. It's your gun so do what you like but as I said...any recommendations will depend on your intended use for it.
