Any thoughts on this? Is there a better deal on higher quality equipment?

Go to a shop that sells armor and get fitted for a custom vest. It will be money well spent.
Vendor suggestions?
Armor level recommendations for teaching?
Any other advice for someone pear-shaped like MDeng?

A1 Uniform for custom fitted stuffs.
IIIA protects against "most" pistol threats. III standalone will stop rifle but steel is heavy and cumbersome. IV is expensive but ceramic so light (er) weight and will stop AP rounds.
I agree. A1 sells and fits armor and IIIA is the level I would go for. It's not a comfortable item, but it does work.
Apparently you have not seen the new Armor Express, Razor panels, unbelievably thin, soft and flexible.
I believe you have experience with AE vests, but this is something altogether new.
