you may transfer rifles (AR or other) face to face without any mandatory paperwork.

Yes, as long as the rifle/s are not banned, and you are both MD residents.

I prefer a bill of sale. I keep this in case the firearm I buy is stolen. It shows that I legally acquired the property in the event it actually is stolen.

Also, try to make sure the buyer, to the best of your knowledge, is not prohibited from owning a firearm.

Is there a formal "bill of sale" or would a simple hand written ledger with buyer seller and firearm info be enough?

I see no value in a bill of sale for a used gun. If I transfer a gun, I either photocopy the transferee's drivers license, or transcribe the information on it. That is proof that I complied with federal law requiring that I transfer it only to a resident of my own state (or to an FFL in any state). Plus, that will come in handy if the transferee misuses the gun & the police knock on my door.
